Double or triple this recipe for a crowd.
2 Slices of bacon cut into 1/2 inch pieces
1 Medium yellow onion diced
1 Tablespoon of prepared mustard
1/3 Cup dark brown sugar
28 Ounce can baked beans (I used Bush’s Maple Syrup and Cured Bacon Baked Beans)
The secret of this recipe is in the cooking of the bacon and the caramelizing of the onion. This is a stove top recipe and the bulk of time is in the cooking of the onion.
Use a skillet large enough for all ingredients.
Over medium high heat layer the bacon across the bottom of the skillet and cook until slightly crisp.
Now add the diced onion and continue cooking until the onion is caramelized. Turn the heat down to medium as necessary. Be sure and use the same skillet with the drippings. Stir the onion and bacon and loosen drippings. This process can take 20-30 minutes.
Once the bacon and onions are well cooked and have some color add the beans, sugar and mustard. Bring all to even heat and simmer 1-2 minutes. It’s ready.
I cannot stress enough the need to cook the bacon and onion well, brown is okay but not burned however. This produces the taste that long baking produces.
