Easy Salmon Dinner

Treasures from the sea were never found on my plate when I was growing up. Well, unless it came from a tuna can. Except for my Grandmother Rose our family was just not into what the ocean had to offer with the exception of crab for my dad and brother. Even grandma repeating fish is brain food didn’t change the menu. Today, there is nothing welcomed like a nicely prepared ocean fish.

This recipe is revised from one printed in the July 2001 Bon Appetit Magazine. It has an impressive presentation whether you are cooking for a crowd or for one.

Thank you Dora for suggesting this recipe so many years ago for me to prepare for Marc, and for taking the recipe from the barbecue to the oven. Marc did enjoy salmon cooked this way. Or was it Ed? 

Dora and I worked together for years in research. We disagreed more than agreed except about food. Remembering our high tea in Phoenix. Or was that Pasadena?

Cheesecake Bites

Not too sweet, rich and creamy dessert. There’s added sugar … less than 4 tablespoons for the entire 16 bars. Swerve (a sugar substitute) can easily be used in place of the two tablespoons of white sugar. It seems I can taste a sweetener no matter how good. (Yes, even in See’s Candies no sugar chocolates.) So, I opted in for the less than one teaspoon of real sugar per square instead. The recipe still remains an excellent ketogenic diet dessert. The crust is nuts! Walnuts to be exact but pecans work equally well. You have to like nuts to appreciate this recipe. Pistachios are another choice.

Great Grandma Gindes said my New York cheesecake was almost as good as hers! A compliment like that I’ll take any day! If she was here today I believe she’d say these are equally delicious.

Keto Friendly Brownies

Fudgy Brownies are a must for me now and then. Actually, more often! Once into the Ketogenic Diet I had to have Brownies and here they are. These are no sugar, no gluten, low carb. So, with that said I give this recipe a solid B (4 Star) when comparing it to this recipe with real sugar. That’s where the scale drops a bit. I used Swerve (Here’s a little information, Sweeteners.) Swerve is one of the newer sweeteners and claims are made it causes less stomach upset, tastes more like the real thing and can be used in baking like sugar 1:1. I found there isn’t an aftertaste as with other sweeteners but there is, I guess you’d call, a texture difference from the real thing. It’s hard to describe … like cold tiny bubbles of sweetness dissolving on your tongue. I thought pop rocks but that’s a little exaggerated.

With all this said the recipe is worth a try and you can decide for yourself if it’s a keeper. When using the best unsweetened baking chocolate not much else matters when it comes to brownies.

Cauliflower Mac n Cheese

For the next posts I’m creating some delicious Ketogenic recipes. Not all meat! In fact, there are Vegetarian versions of this diet. Whether you’re into the Ketogenic Diet or not you’ll enjoy this version of Mac n Cheese. Roasted Cauliflower subs for the macaroni. No matter how much cheese or what spice you add this definitely tastes of cauliflower. My family loves roasted cauliflower … So, adding cheese was just a perfect addition for a main dish result.

About the Ketogenic Diet … I recently began following Keto recommendations with amazing success in losing weight but what peaked my interest most was the benefits to nerve and brain health. I’ve lived long enough to know, information today changes tomorrow … But what I’ve studied just makes sense. I’m sure this diet isn’t for everyone. I recommend contacting your physician before beginning any strict dietary regimen.

A Delicious Indulgence

Pan Seared Filet Mignon with Blue Cheese

Pan Seared Filet Mignon is so easy and wonderfully delicious. Add this simple Blue Cheese Butter Topping for added deliciousness. Jerry, a long lost friend of mine, introduced me to this amazing steak topper … and pineapple smothered Spam … maybe another time! This is always an impressive meal and so simple. You must learn the pan sear trick.

Here are a few hints I was taught along the way that may be useful:
-Use a seasoned cast iron skillet or a heavy bottom skillet.
-The skillet must be hot.
-Use the fat you have trimmed off the steak to grease the bottom of the skillet. Use a fork to run the fat around the bottom of the heated pan and then remove it.
-I often use a skillet so well seasoned no grease or oil is needed to avoid sticking. If you try this be aware the meat will stick until it is seared. Wait a minute or two, then turn it over.
-You may need to turn the heat down slightly after you add the steak to avoid too much browning. Adjusting the heat as you go may be necessary.
-Turning the steak more than once or twice will not dry out the steak.
-I was taught to salt the heated skillet rather than oil to prevent sticking. This method may no longer be in vogue.
