Mosaic Project

Loving the out of doors … garden’s in, and nearing its first production. Every corner of my yard has a purpose but there’s one spot that needs a little color, the concrete table.  I’ve been wanting to try my hand at mosaic and with these bright Mexican tiles this table will come alive. Sadly, many tiles will be hammered and cut to produce the finished product. Because I’m not sure this activity will continue to be a passion I’m not investing in expensive cutting tools. I’m going to be inventive. I may use colorful dishes and clay pot pieces as well. I hope you’ll enjoy following my progress.

Smoked Peri Peri Chicken

Smokin’ Hot Chicken

Juicy chicken guaranteed! This recipe is made with the help of Nando’s Peri Peri Sauce. And because I didn’t get the extra hot variety a few drops of Malagueta pepper juice & several whole peppers were added. I always suggest making the marinade the night before … giving time for flavors to peak. Some experts feel a dry rug is best with smoking but I find either a dry rub or marinade acceptable. There’s no flare up with dripping sauce or juices with my smoker which I talk about here. The water barrier pretty much puts an end to charcoal burned chicken. If you’ve smoked before you know the time element. Let’s get started!

You may or may not have difficulty finding these products. This is a great place to reference Nando’s Peri Peri history. For sauce purchase, Amazon and World Market.

Malagueta Peppers may have been purchased at R-N Supermarket, Tulare, California or a local Save Mart. But again can be found on Amazon.

You may not need the extra Malagueta Peppers if the Nando’s Sauce has the right heat for you.

Red Velvet Cookies

Craving Red Velvet? Here’s a deliciously easy fix! My first recommendation is to use your very best unsweetened cocoa. I used Guittard Cocoa Rouge Cocoa Powder for its great taste and red cocoa color. It can be purchased at Amazon.com if you have difficulty finding it. Great for brownies too!

Red Velvet Cookies

Coming Next!

Dinner isn’t complete without dessert! (in my opinion) Dessert can be as simple as fresh fruit, a special coffee, or digestif. But I have to admit I love cake and cookies, all with coffee, best. So, when I was watching Andie McDowell’s party for her new boyfriend in Love After Love I was focused on the red velvet cake at the end of the table. (The party went south pretty quickly. How many noticed the cake?) It looked deliciously homemade just like the result I had with Cook’s Illustrated’s Red Velvet Cake Recipe. Some times a cake is too much … so the reason for this cookie. Soon!

About the movie, Andie’s son (actor O’Dowd) was less than likable (3 out of 5 stars).

Good Old Fashioned Stuffed Bell Peppers

Number three son recently asked for this recipe. When I emailed it to him I began to crave it … even the green bell peppers that I avoided as a kid. (But, make this recipe in my opinion.) Not all my children were into the green bell peppers … So, I always made a little extra stuffing to serve ‘unstuffed.’ Certainly the green bells can be traded out with the less strong tasting more mature red, orange or yellow. I suppose you could make it without bell peppers at all. Ha! Quick and yummy! Give it a try!

Happy Saint Patrick’s Day

Corned Beef BrineIt’s just fun to celebrate St. Patrick’s Day even if you aren’t Irish. Maybe like me you just don’t like the list of ingredients on the corned beef package. It’s not just the Insta Cure, a sodium nitrite that is usually added to impart the red color and the distinctive cured meat flavor, but the tenderizers and who knows what else. So, this year I’m giving my own try at Corned Beef Brine without the Insta Cure, tenderizers and other chemicals. If this is scary for you … you may want to try one of my other ‘sorta’ Irish recipes. You see, until about 6 years ago I thought I was part Irish. It’s not 23andMe that has me convinced otherwise. We are from a different part of Western Europe than previously thought. We are now Scottish Royalty instead according to my Mother. No, I’m not buying it!

Onion Soup

And before Julia Child there was Fannie Farmer. My Mother in her later years acquired a Fannie Farmer Cookbook, a cookbook that was first published in 1896. Mother came from old school and followed recipes to the letter. She loved the simplicity of this cookbook. And no one was complaining about the delicious results. After Mother’s death I acquired her small collection of cookbooks. The one I cherished had long disappeared, a gift to my Mother from my Dad at their first Christmas. As my Mother tells it, she cried and cried when she opened the gift. At the age of 10 as she told the story I wasn’t sure … did she love it or hate it. For many years this Good Housekeeping Cookbook was her go-to.

This Onion Soup recipe is influenced by Fannie Farmer’s 6 ingredient recipe. No beef stock or broth. Has an amazing depth in flavor.

Cranberry Almond Biscotti

Goodness! We’ve eaten them all up and I have yet to post the recipe. I have to honest. I’m particular about my biscotti. Freshly baked gets thumbs up while store bought … can’t go there.
