Are you looking forward to Mother’s Day Sunday? Or, are you ambivalent?

Picking a Mother’s Day card for my mother is always difficult. I can’t seem to relate to the verses I find in the majority of Mother’s Day greeting cards. For many years this was a mystery … The ambivalence and struggle for the right card and gift. And I didn’t experience an ‘aha’ moment exactly.  But today the ambivalence about Mother’s Day has gone.

There are so many I appreciate on Mother’s Day, family and friends. My daughter and daughter-in-law, April especially … The young mothers of today. And I love being celebrated by my children.

I chose this recipe because of its simplicity. Breakfast in bed is a favorite treat children put together for mom. This recipe can be done by little hands. Or wrap these muffins in a special baking dish as a lovely gift for a mom.

This is definitely a variation on Tex Mex migas. The guest of honor, Austin, may just have the same hesitations when it comes to onions and fresh tomatoes as his sister, Aubree. We are a family that orders on the side. Watching When Harry Met Sally, we recognize ourselves in the restaurant scenes … well, not all the restaurant scenes.

I have given recipe options for those that prefer on the side. This recipe is so very easy and just a nice meal for guests or a large family celebration.

Your family, your Valentine will enjoy this tasteful treat. If raspberry is not your favorite try strawberry. Or for a really decadent surprise sandwich these with a chocolate filling … maybe even white chocolate with a drip of red food coloring mixed in for the occasion.

Spicy Portuguese Sopas

Portuguese Sopas is a traditional soup from the Azores. It is made each year for a celebration occurring about two months following Easter. For seven years my brother, Dan, helped with the preparation of this sopa do Espirito Santo for our hometown celebration.

We enjoy eating this soup, his recipe here with my tiny variation, throughout the year especially in the colder months. To us it’s a comfort food. Yep, some of the guys in our family can eat this morning, noon and night … loving every spoonful. Dan’s son Stephen admits!

All ingredients with the exception of the cabbage, bread and mint have been added. My Grandmother would say, don’t be afraid of spices!  Now for the long cooking to meld the flavors.

This standing rib roast, small end, was just over seven pounds with three ribs (ribs were cut away and tied) … enough to serve 6-8 adults.
