Oven Fajitas & Classic EnchiladasTwo thumbs up! Love no fuss dishes that have the food on the table in a flash. These Oven Chicken Fajitas are not too spicy and the chicken is so juicy good. If you’re looking for something healthy, simple, presents well (cook & serve in a paella pan) and is delicious, this is it! The Classic Enchiladas take just a little longer to put together but let’s admit it, the clean up, yikes! I love both of these recipes. The fajitas are pretty much a complete meal. By adding the perfect garnish to the enchilada it too can be a meal in itself.

As I have said so many times enchiladas are a family favorite. I have many recipes, here, here, here & here. The significance of this recipe, it unlike the others is made with a tomato base. And as a classic, cheese is the only filler. Hope you enjoy these recipes. We sure did!

Pozole Verde Soup Portuguese Style

Three bowls later I’ve decided this is a keeper. My guy friend checking out the local sports bars in Visalia fell for Rookie’s Posole Verde Soup. Three days in a row or was it four! His excuse was Fitbit steps as each day around noon off he went walking Main Street. I’m not sure if he topped it off with a draft, his usual reason for stopping at Rookies. But he couldn’t say enough about this soup. I decided then and there to create Posole Verde Soup, my style, Portuguese style. Would you believe I’m not the first to use linguica.

Chicken or pork or a combination is most often used for the authentic Mexican style soup or stew. Posole or Pozole means hominy, a main ingredient. And verde is everything green; tomatillos, jalapeños, poblanos, avocado, cilantro and lime.

What fun creating this soup! And yep, I did have three bowls to determine just how much I loved it. The lime adds just what’s needed to bring forth the flavors. So, don’t skip it!

Chile Colorado

Earthy beefy Chile Colorado! Thinking quickly I turned the last little bit in the serving dish into this quesadilla. That’s what I get … attempting to do a food photo while everyone is eating. Wait! Two slices of flat bread hot off the skillet, slathered with Chile Colorado, sprinkled with cheese and slapped together. Beyond expectations. Luckily I got in a couple of snapshots before this too was gone.

Hatch Red Chile Sauce

Hatch Red Chile SauceHatch Chiles from New Mexico make this red sauce. The ornamental cluster of dried pods was a gift from a good friend. Now one of my best friends! Ha! My Enchiladas are more amazing. And today I’m making my first Chile Colorado Beef dish. This sauce has some heat, moderate … just enough to give a little bite but not hide the flavor. I’d like to give credit here but the printed recipe card was simply slipped into the bag with the string of dried pods and has no author. It’s a recipe that won’t disappoint! Give it a try! Amazing gift from a friend who traveled through New Mexico. He just knew I’d love this ornamental dried pod arrangement. What he didn’t know is these are more than ornamental! They cook into the best red sauce in the world. Okay, I don’t know if they meet this claim to fame but it’s the best Red Chile Sauce I’ve ever eaten. What better way to spend a rainy day! Cooking this simple recipe! What makes the sauce is not a complex recipe but the Hatch Peppers.
