Ecstatic! A surprise package of cheeses, fresh and seasoned (aged), arrived from the producers of Asiago Pdo (Protected Designation of Origin) … from the Asiago Region in Italy. Cheese has been produced not for hundreds of years in this region but thousands. I’d say, practice makes perfect!

Not sure if I’ve ever tasted fresh Asiago before today … soft, melt in your mouth texture but not sticky, mild smelling and tasting, not bitter nor salty-definitely maintaining a bit of sweetness all the way through. It’s amazing! As far as shelf life after opening, this one is fairly short … maybe two weeks but don’t hold me to that. It won’t last that long around here anyway. The seasoned Asiago Pdo has three levels of maturity, 3-6 months, over 10 months and over 15 months. My little wedge was from the first level. And just an aside, domestic Asiago that I purchase locally (made in Wisconsin) is in the 5 month range. Obviously the flavor (nutty) and smell (bread-like) increase and change with the seasoned process. And rather than accepting my opinion that there is a definite taste difference, Pdo vs Domestic Asiago, do your own taste test.

Portuguese Marinated Chicken ThighsSounds a bit like a few of my romantic relationships.  But it’s really about food! A Portuguese lamb marinade used for chicken thighs. Use this marinade for your lamb shanks or shoulder. Or if you have a family not too fond of lamb try it on chicken. Thighs vs breast meat? Thighs have a higher fat content. Seemed a better choice. This recipe can easily be used for your barbecue chicken and lamb. Delicious!

Looking through my recipes I came across one for beef stroganoff … My friend Cathy’s recipe carefully handwritten for me. Thank you again! I did make this recipe over the years and shared it with a friend or two. It was wonderful.

As I looked at the ingredients I realized I could make some changes … for one, beef to chicken. Recipes as friendships need a little change up to fit the changing times … Sometimes to become healthier and provide more exciting ingredients for the sophisticated palate of today. The other major changes, no cream of mushroom soup … chicken broth instead, and fresh mushrooms added. This is a simple recipe and fast too. On the table in thirty!

This is so delicious! Can you tell? Here’s the story about this recipe. This is actually my recipe for Eggplant Parmesan. So, if you happen upon this page and are vegetarian just substitute one large sliced eggplant (with moisture removed) for the chicken. Veal? I can’t.

Remember my Italian food critic from my previous Italian cuisine posts? Just to refresh … 15 years of testing these recipes. This is his fav Eggplant Parmesan recipe. And it converts perfectly to chicken … on a bed of pasta.

Portuguese Piri Piri Roasted Chicken

Piri Piri is the name given by the Portuguese for the African bird’s eye chili. This little chili pepper is commonly made into a sauce to be used with chicken and sometimes fish in Portuguese Cuisine. The chili rates about a 7 on a heat rating scale of 1-10, 10 being the hottest.

I suggest making the sauce at least a day ahead to give it time to intensify flavors. Do keep it refrigerated unless you are going to use it the day you make it. The chili peppers are hard to find in your local grocery store but here are some substitutions; Pequin, Cayenne and Tabasco. The heat of all these are about the same. Amazon does have Piri Piri but I purchased Pequin from a local grocer.

Doesn’t it make a nice presentation here with my roasted chicken. This recipe can be taken to the barbecue. I teased the idea but favored the oven instead … This time!

My brother couldn’t bring himself to eat rabbit … And if I did, it was purely not knowing. My brother and I were fond of these animals but not for dinner.
